  • For the crust:
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • For the cheesecake filling:
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream
  • For the brûlée topping:
  • 1/4 cup granulated sugar (for caramelizing)
  • Optional garnish:
  • Fresh raspberries
  • Mint leaves

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  3. Line a mini muffin tin with paper liners or grease it. Press about 1 tablespoon of the crumb mixture into the bottom of each cavity. Bake for 5-7 minutes until set. Remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
  5. Add sugar and mix well. Then, add eggs one at a time, mixing well after each addition. Stir in vanilla extract and heavy cream until smooth and combined.
  6. Pour cheesecake filling evenly over the baked crusts, filling them about 3/4 of the way full.
  7. Bake in the preheated oven for 15-20 minutes or until the centers are just set with a slight jiggle.
  8. Turn off the oven, crack the oven door, and let cool for about 1 hour. Then refrigerate for at least 2 hours or until fully chilled.
  9. Before serving, sprinkle about 1 teaspoon of granulated sugar over the top of each cheesecake bite.
  10. Use a kitchen torch to caramelize the sugar until golden and bubbly. Alternatively, place under a broiler for a few minutes, watching closely.
  11. Let cool for a minute before serving. Optional: Garnish with fresh raspberries and mint leaves.

Notes

For a different flavor, consider adding citrus zest to the cheesecake filling or swapping out the graham cracker for cookie crumbs in the crust. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
