Indulge in these Southern-style sausage enchiladas enveloped in creamy gravy, perfect for a comforting dinner that’s both hearty and flavorful.

Ingredients

Scale
  • 1 lb breakfast sausage (mild or spicy, as preferred)
  • 1/4 cup onion, finely chopped
  • 1/4 cup green bell pepper, finely chopped
  • 1/4 cup jalapeño peppers, finely chopped (optional, for heat)
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas (8-inch size)
  • 2 cups milk
  • 1/4 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper (optional, for more heat)
  • 1 cup shredded cheese for topping

Instructions

  1. In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain extra grease if necessary.
  2. Add the chopped onion and green bell pepper to the skillet with the sausage. Cook until the vegetables are tender, about 3-5 minutes. If using jalapeños, add them at this stage as well.
  3. Remove from heat and stir in 1 cup of shredded cheddar cheese until melted. Set aside.
  4. For the creamy gravy, in a separate saucepan, combine the flour, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Gradually whisk in the milk over medium heat, stirring constantly until thickened and smooth, about 5-7 minutes.
  5. Preheat your oven to 350°F (175°C).
  6. To assemble the enchiladas, spoon about 1/4 cup of the sausage mixture onto each tortilla, roll it up tightly, and place seam-side down in a greased 9×13 inch baking dish.
  7. Pour the creamy gravy over the rolled enchiladas, ensuring they are well covered. Top with the remaining cup of shredded cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  9. Allow to cool slightly before serving. Enjoy!

Notes

  • You can customize the filling by adding cooked eggs or other vegetables according to your taste.
  • For an added kick, consider adding hot sauce to the gravy or drizzling it on top before serving.
