Spicy Jalapeño Popper Quesadillas

Deliciously cheesy and spicy, these jalapeño popper quesadillas are a crowd-pleasing treat perfect for game day or any casual gathering.

  • 4 large flour tortillas
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced fresh jalapeños (seeds removed for milder flavor)
  • 1/2 cup cooked and crumbled bacon (optional)
  • 1/4 cup diced red onion
  • 2 tbsp fresh cilantro, chopped (for garnish)
  • 1 tbsp olive oil (for cooking)
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, shredded mozzarella cheese, diced jalapeños, crumbled bacon (if using), red onion, salt, and pepper. Mix until well combined.
  2. Heat a large skillet over medium heat and add a tablespoon of olive oil.
  3. Place one tortilla in the skillet and spread half of the cheese mixture evenly over it.
  4. Top the cheese mixture with another tortilla, pressing down gently. Cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese starts to melt.
  5. Carefully flip the quesadilla using a spatula and cook the other side for an additional 3-4 minutes until it is golden brown and crispy.
  6. Remove the cooked quesadilla from the skillet and let it cool for a minute before slicing it into wedges.
  7. Repeat with the remaining tortillas and cheese mixture.
  8. Serve the quesadillas warm, garnished with chopped cilantro. Optional dips such as sour cream or salsa can be served on the side.

  • For extra flavor, consider adding spices like garlic powder or smoked paprika to the cheese mixture.
