- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup diced fresh jalapeños (seeds removed for milder flavor)
- 1/2 cup cooked and crumbled bacon (optional)
- 1/4 cup diced red onion
- 2 tbsp fresh cilantro, chopped (for garnish)
- 1 tbsp olive oil (for cooking)
- Salt and pepper to taste
- In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, shredded mozzarella cheese, diced jalapeños, crumbled bacon (if using), red onion, salt, and pepper. Mix until well combined.
- Heat a large skillet over medium heat and add a tablespoon of olive oil.
- Place one tortilla in the skillet and spread half of the cheese mixture evenly over it.
- Top the cheese mixture with another tortilla, pressing down gently. Cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese starts to melt.
- Carefully flip the quesadilla using a spatula and cook the other side for an additional 3-4 minutes until it is golden brown and crispy.
- Remove the cooked quesadilla from the skillet and let it cool for a minute before slicing it into wedges.
- Repeat with the remaining tortillas and cheese mixture.
- Serve the quesadillas warm, garnished with chopped cilantro. Optional dips such as sour cream or salsa can be served on the side.
