Cheesy Ham & Bacon Potatoes

A creamy and cheesy potato bake loaded with ham and bacon, perfect for a comforting side dish or hearty meal.

  • 4 medium-sized potatoes, peeled and diced
  • 1 cup cooked ham, diced
  • 1 cup cooked bacon, chopped
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (or butter) for greasing

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish with olive oil or butter.
  2. Boil the diced potatoes in salted water for about 10-15 minutes, or until just tender. Drain and set aside to cool slightly.
  3. In a large mixing bowl, combine the cooked potatoes, diced ham, chopped bacon, shredded cheddar cheese, sour cream, mayonnaise, green onions, garlic powder, salt, and pepper. Mix well until all ingredients are evenly coated.
  4. Transfer the potato mixture into the prepared baking dish, spreading it out evenly.
  5. Top with additional shredded cheddar cheese if desired.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
  7. Remove from the oven and let it cool for a few minutes before serving.

Notes

For a lighter version, substitute Greek yogurt for sour cream. Feel free to add any other cooked vegetables like broccoli or bell peppers for added nutrition.
