Creamy Hearty Chicken Stew

A comforting and creamy chicken stew filled with tender vegetables and savory herbs, perfect for a cozy dinner.

  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups potatoes, cubed
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 cup corn (optional)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned, about 5-7 minutes. Remove the chicken and set aside.
  2. In the same pot, add the onion, carrots, and celery. Sauté until the vegetables are tender, about 5-6 minutes. Add the garlic and cook for 1 minute more.
  3. Pour in the chicken broth and bring to a boil. Add the cubed potatoes and thyme. Reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
  4. Return the cooked chicken to the pot. Add the frozen peas and corn (if using). Stir well.
  5. Pour in the heavy cream and stir until combined. Let the stew simmer for an additional 5 minutes to thicken.
  6. Adjust seasoning with salt and pepper to taste.
  7. Serve warm, garnished with fresh parsley.

Notes

For added richness, stir in some grated Parmesan cheese just before serving. This stew is perfect for leftovers and can be stored in the fridge for up to 3 days.
