Hearty Texas Cowboy Stew

A comforting and flavorful stew packed with ground beef, smoked sausage, and hearty vegetables, perfect for satisfying appetites on a chilly day.

  • 1 lb ground beef
  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 2 medium potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, heat a bit of oil over medium heat. Add the ground beef and cook until browned. Drain excess fat if necessary.
  2. Add the sliced smoked sausage to the pot and cook for an additional 5 minutes until the sausage is browned.
  3. Stir in the diced onion and minced garlic. Cook until the onion is soft and translucent, about 3-4 minutes.
  4. Pour in the beef broth and stir in the kidney beans, black beans, corn, diced potatoes, and diced tomatoes.
  5. Season the mixture with chili powder, cumin, paprika, salt, and pepper, stirring to combine.
  6. Bring the stew to a boil, then reduce the heat to low. Cover and let simmer for 30-40 minutes, or until the potatoes are tender.
  7. Taste and adjust seasonings as needed.
  8. Serve hot, garnished with fresh parsley or cilantro if desired.

Notes

For an extra kick, add some cayenne pepper or diced jalapeños. This stew can be stored in the refrigerator for up to 4 days and freezes well for up to 3 months.
