  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 3 medium potatoes, diced (about 4 cups)
  • 4 cups beef broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 3-4 minutes.
  2. Add the minced garlic and ground beef to the pot. Cook until the beef is browned, breaking it up as it cooks. Drain excess grease if necessary.
  3. Stir in the diced carrots and potatoes, mixing well with the beef and onion.
  4. Pour in the beef broth, Worcestershire sauce, and Italian seasoning. Season with salt and pepper. Bring the mixture to a boil, then reduce heat and simmer for about 20 minutes, or until the potatoes and carrots are tender.
  5. Stir in the milk and heavy cream. Gradually add the shredded cheddar cheese, stirring until melted and combined.
  6. Allow the soup to simmer for an additional 5 minutes, stirring occasionally.
  7. Serve hot, garnished with chopped green onions or parsley if desired.

Notes

You can adjust the amount of cheese and cream based on your desired creaminess and cheddar flavor.
