Cheesy Mashed Potato Puffs

Deliciously cheesy and crispy on the outside, these mashed potato puffs are a perfect side dish or appetizer that can be enjoyed warm and satisfying.

Ingredients

  • 2 cups mashed potatoes (prepared, preferably leftover)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh chives (optional, for garnish)
  • Extra shredded cheese for topping (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish or muffin tin with non-stick spray.
  2. In a large mixing bowl, combine the mashed potatoes with shredded cheddar cheese, grated Parmesan cheese, eggs, milk, garlic powder, onion powder, salt, and pepper. Mix until well blended and smooth.
  3. If using, fold in the chopped chives to add a fresh flavor.
  4. Spoon the potato mixture into the prepared baking dish or muffin tin, filling each cavity about 3/4 full. For a crispy top, sprinkle a little extra shredded cheese on top of each puff.
  5. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the edges are crispy.
  6. Remove from the oven and let them cool slightly before serving. Garnish with additional chives if desired.
  7. Serve warm as a tasty side dish or appetizer!

Notes

  • Customize the recipe by adding cooked bacon bits or using different types of cheese.
  • These puffs can be made ahead of time and reheated in the oven for serving later.
