Creamy Potato and Sausage Chowder

Creamy Potato and Sausage Chowder

A hearty and comforting chowder packed with Italian sausage, creamy potatoes, and vibrant vegetables, perfect for warming up on a chilly day.

Ingredients

Scale
  • 1 lb (450g) Italian sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, diced (about 4 cups)
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  2. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the diced potatoes, carrots, and celery to the pot. Pour in the chicken broth, and add the thyme and smoked paprika. Season with salt and pepper. Bring to a boil, then reduce the heat and let simmer for about 15-20 minutes, or until the potatoes are tender.
  4. Stir in the heavy cream and milk. Let the chowder simmer for an additional 5-10 minutes, allowing it to thicken slightly.
  5. Taste and adjust the seasoning with more salt and pepper if needed.
  6. Serve hot, garnished with chopped fresh parsley.

Notes

For added flavor, you can include other vegetables such as corn or peas. If you like a bit of heat, consider adding a pinch of red pepper flakes.
