- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 pound large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- In a skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
- Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes (if using). Cook until the shrimp are pink and opaque, about 3-4 minutes. Remove from heat and set aside.
- In a bowl, combine the shredded mozzarella and cheddar cheese. Set aside.
- Butter one side of each slice of bread. On the unbuttered side of four slices, layer a generous amount of the cheese mixture, followed by the cooked garlic shrimp, and then top with more cheese. Top with the remaining bread slices, buttered side facing out.
- In the same skillet, or a clean skillet, grill the sandwiches over medium heat. Cook each side for about 4-5 minutes or until the bread is golden and crispy, and the cheese is melted.
- Remove from the skillet and let cool slightly. Cut in half, garnish with chopped parsley, and serve warm.
