Garlic Shrimp Grilled Cheese on Cheesy Bread

A delicious twist on a classic, this Garlic Shrimp Grilled Cheese features savory shrimp and melty cheeses sandwiched between crispy, cheesy bread.

Ingredients

  • 8 slices of crusty bread (such as sourdough or ciabatta)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  2. Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes (if using). Cook until the shrimp are pink and opaque, about 3-4 minutes. Remove from heat and set aside.
  3. In a bowl, combine the shredded mozzarella and cheddar cheese. Set aside.
  4. Butter one side of each slice of bread. On the unbuttered side of four slices, layer a generous amount of the cheese mixture, followed by the cooked garlic shrimp, and then top with more cheese. Top with the remaining bread slices, buttered side facing out.
  5. In the same skillet, or a clean skillet, grill the sandwiches over medium heat. Cook each side for about 4-5 minutes or until the bread is golden and crispy, and the cheese is melted.
  6. Remove from the skillet and let cool slightly. Cut in half, garnish with chopped parsley, and serve warm.

Notes

  • Adjust the cheese types based on your preferences.
  • For extra flavor, consider adding a splash of lemon juice over the shrimp before assembling.
