  • 2 cloves garlic, minced

  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Wash the baby potatoes and halve them if they are larger; leave smaller ones whole.
  3. In a large bowl, whisk together the honey, Dijon mustard, olive oil, minced garlic, dried thyme, salt, and pepper until well combined.
  4. Add the potatoes to the bowl and toss them until they are evenly coated with the honey mustard mixture.
  5. Spread the coated potatoes in a single layer on the prepared baking sheet.
  6. Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and tender. Turn the potatoes halfway through the cooking time to ensure even browning.
  7. Once cooked, remove from the oven and let cool for a few minutes. Taste and adjust the seasoning if necessary.
