  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup cooked bacon, crumbled
  • 1/4 cup green onions (scallions), finely chopped
  • 1/4 cup cream cheese, softened
  • Salt and pepper to taste
  • 1 cup breadcrumbs (Panko preferred for extra crunch)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • Oil for frying (vegetable or canola)

Instructions

  1. In a large bowl, combine the cooled mashed potatoes, cheddar cheese, crumbled bacon, green onions, cream cheese, salt, and pepper. Mix until well combined.
  2. Scoop out about 2 tablespoons of the mashed potato mixture and roll it into a ball. Repeat until all the mixture is used.
  3. Set up a breading station: Place the flour in one bowl, beaten eggs in another, and breadcrumbs in a third bowl.
  4. Roll each potato ball first in flour, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Ensure each ball is fully coated for a crispy finish.
  5. Heat about 2 inches of oil in a deep skillet or pot over medium-high heat until the oil reaches 350°F (175°C).
  6. Carefully drop a few potato bites into the hot oil, being cautious not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy.
  7. Use a slotted spoon to remove the bites and drain them on paper towels. Repeat the frying process with the remaining potato balls.
  8. Serve warm, garnished with additional chopped green onions or alongside your favorite dipping sauce (like sour cream or ranch).

Notes

For a twist, try adding different cheese varieties or herbs to the mixture. Store any leftovers in an airtight container in the fridge for up to 3 days; reheat in the oven to retain crispiness.
