Ingredients

Scale
  • For the dough:
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 teaspoon salt
  • 1/2 cup whole milk, warmed
  • 1/4 cup water, warmed
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • For the filling:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1 cup cooked bacon, chopped
  • 1/4 cup maple syrup
  • For the glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1 tablespoon bourbon (optional)
  • 1/4 teaspoon vanilla extract
  • Additional cooked bacon for topping

Instructions

  1. Prepare the dough: In a large bowl, combine warmed milk, water, and sugar. Sprinkle yeast over the top and let it sit for about 5 minutes until frothy.
  2. Add melted butter, eggs, and salt to the yeast mixture. Mix until combined.
  3. Gradually add flour, 1 cup at a time, mixing until a soft dough forms. Knead the dough for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place until doubled in size, about 1 hour.
  5. Meanwhile, cook the bacon until crispy. Remove from the pan and drain on paper towels. Chop into small pieces.
  6. In a bowl, mix softened butter, brown sugar, cinnamon, chopped bacon, and maple syrup until well combined.
  7. Once the dough has risen, punch it down and roll it out on a floured surface into a large rectangle (about 16×24 inches).
  8. Spread the bacon filling evenly over the dough, leaving a small border around the edges.
  9. Starting from one edge, tightly roll the dough into a log. Cut the log into 12 equal pieces and place them in a greased 9×13-inch baking dish.
  10. Cover the dish with a towel and let the rolls rise for another 30 minutes.
  11. Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes or until golden brown.
  12. In a small bowl, whisk together powdered sugar, milk, bourbon (if using), and vanilla extract until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.
  13. Once the rolls are baked, remove them from the oven and let them cool slightly before drizzling the glaze on top.
  14. Garnish with additional chopped bacon for added flavor and texture. Serve warm.

Notes

For a non-alcoholic glaze, omit the bourbon and substitute with an additional tablespoon of milk. These rolls can be stored in an airtight container at room temperature for up to 2 days or refrigerated for up to a week.
